Paris-Brest: Celebrating the simplicity of hazelnut

This is a Paris-Brest and it is PNW Hazelnuts at their finest. Not sure you like hazelnut? This just might turn you. We’ve had multiple people try one taste only to fall in love with this hazelnut dream!

This choux pâtisserie, filled with a housemade praline of ground caramelized hazelnuts sits beneath a layer of piped hazelnut mousseline cream, is pure decadence. Topped with sliced almonds and a dash of powdered sugar, just imagine yourself sharing with a friend or bringing a few to your next dinner party!

History of this pâtisserie
The Paris-Brest was created in 1901 by Chef Louis Durand. It is named for a bike race that runs between Paris and the city of Brest. The circular shape is reminiscent of a bicycle wheel.
