Paris-Brest

Choux pastry filled with a housemade praline of ground carmelized hazelnuts sits beneath a layer of piped hazelnut mousseline cream. Topped with slivered almonds and a dash of powdered sugar.

For a little history, the Paris-Brest was created in 1901 by Chef Louis Durand. It’s named for a bike race that runs between Paris and the city of Brest.
